Lasagne and Physical Therapy

David is at his PT appointment (aquatherapy, I love it!!!) and I am making lasagne. Lasagne may be the perfect food: cheese, tomatoes, high glycemic value pasta, more cheese...oh yeah...and sausage/pepperoni. But the sauce was homemade, and I know it has no additives/preservatives, and my Italian blood was crying out for ricotta, asiago and mozzarella.

Tip: spend a bit more for good mozzarella, if you aren't up to making it yourself. Really, make it yourself if you can. It's easy and inexpensive, and if you have kids, you get the fun of watching them learn a little chemistry. I accidentally bought a certain giganto-foods mozzarella, and succeeded on turning it into cream cheese in the food processor.

I will post my homemade mozzarella and ricotta recipes another day. Or you can look it up online in the Mother Earth News archive. I bought the book that the recipe came out of, but right now I'm feeling too lazy to get up and hunt down the recipes.
